Chef's Pro-Tips
- Mise en Place: Measure and prep all ingredients before you turn on the stove. This recipe moves quickly, and having everything ready prevents burning.
- Fresh is Best: Whenever possible, use freshly squeezed lemon juice, whole garlic cloves, and fresh herbs instead of dried/jarred versions. The flavor difference is huge!
- Pat Dry: Moisture is the enemy of a good sear. Always pat proteins (like chicken, fish, or tofu) completely dry with paper towels before placing them in the hot pan.
Ingredients
2
servings
-
8 oz lean ground beef
-
2 medium flour tortillas, street taco size
-
2 slices cheddar cheese
-
½ cup shredded iceberg lettuce
-
6 slices dill pickles
-
2 tbsp mayonnaise, for sauce
-
1 tbsp sweet relish, for sauce
-
1 tsp yellow mustard, for sauce
Step-by-Step Instructions
Prep the Sauce and Beef
In a small bowl, whisk together the mayonnaise, sweet relish, and yellow mustard to make the special burger sauce. Divide the ground beef into two equal portions and roll them into balls.
Smash in Skillet
Heat a cast iron skillet over high heat. Place a beef ball in the pan, immediately place a flour tortilla on top, and use a heavy spatula or burger press to press down firmly until the beef is smashed flat against the skillet. Season the beef side with salt and pepper.
Flip and Melt
Cook for 2-3 minutes until the beef has a crispy, caramelized crust. Flip the tortilla so the beef is facing up. Place a slice of Cheddar cheese on the hot beef, cover, and let melt for 1 minute. Remove, top with lettuce, pickles, and sauce, and fold.
