Step-by-Step Instructions
Prep graham crumbs
Place the graham crackers in a zip-top bag and crush them with a rolling pin until they form fine, sand-like crumbs. Transfer the crumbs to a wide shallow bowl.
Melt Chocolate
In a small microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and glossy.
Skewer and Dip
Push a lollipop stick or skewer into the bottom center of each marshmallow. Dip the top half of each marshmallow into the melted chocolate, letting any excess drip back into the bowl.
Coat and Set
Immediately roll the chocolate-coated marshmallow in the graham cracker crumbs until well coated. Place the pops upright in a glass jar or lie them down on a parchment-lined tray. Chill in the fridge for 10 minutes to set the chocolate.
